Ingredients
  

Chicken
  • 3 chicken breasts halved thin
  • 1/2 cup pickle juice
  • 1 egg
  • 1/4 cup milk
  • 1 cup flour
  • 2 tablespoons powdered sugar
  • 1 teaspoon paprika
  • 1 teaspoon salt
Biscuits
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons cold butter
  • 3/4 cup buttermilk

Equipment

  • Deep skillet
  • Biscuit cutter
  • Baking sheet

Method
 

  1. Soak the chicken in pickle juice for 30 minutes. Meanwhile make the biscuits: cut butter into the flour, baking powder, and salt, stir in buttermilk, cut, and bake at 450F for 12 minutes.
  2. Whisk the egg and milk. Combine the flour, powdered sugar, paprika, and salt.
  3. Dip the chicken in the egg wash, then dredge in the seasoned flour.
  4. Fry in 350F oil for 4-5 minutes until golden and cooked through, then drain.
  5. Split the warm biscuits and tuck a chicken fillet inside each. Serve.

Notes

The pickle-brine soak is the Chick-fil-A secret - it seasons the chicken and keeps it juicy. Powdered sugar in the breading adds the signature subtle sweetness.
