Copycat Chick-fil-A Waffle Fries

A copycat of Chick-fil-A waffle fries - waffle-cut potatoes fried until crispy and golden with fluffy centers, lightly seasoned with salt.

Ingredients
  

  • 3 russet potatoes
  • oil for frying
  • 1 teaspoon salt

Equipment

  • Mandoline with waffle blade
  • Deep pot

Method
 

  1. Using a waffle/crinkle mandoline blade, slice the potatoes, rotating 90 degrees between each slice to create the lattice pattern.
  2. Soak the slices in cold water 30 minutes, then pat very dry.
  3. Fry at 325F for 3-4 minutes until soft, then remove.
  4. Increase the oil to 375F and fry again 2-3 minutes until golden and crisp.
  5. Drain, season with salt, and serve immediately.

Notes

A crinkle/waffle mandoline blade is needed for the signature shape - rotate the potato 90 degrees between slices to create the lattice. Double-fry for the crispiest result.
