- Blend the chipotles, garlic, broth, lime juice, cumin, and oregano into a smooth sauce.
- Place the beef in a slow cooker, pour over the sauce, and add the bay leaves.
- Cook on low for 8 hours (or 4 hours high) until fork-tender.
- Shred the beef and toss in the juices. Serve in bowls, tacos, or burritos.
Notes
Don't drain the cooking liquid - it keeps the barbacoa juicy. Adjust chipotles for more or less heat.
