Ingredients
  

  • 1 cup long-grain white rice basmati preferred
  • 2 cups water
  • 1 bay leaf
  • 1 tablespoon olive oil
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon lime zest
  • 1/4 cup fresh cilantro chopped
  • 1/2 teaspoon salt

Method
 

  1. Combine the rice, water, bay leaf, and oil in a saucepan. Bring to a boil, then cover and simmer on low for 15-18 minutes until the water is absorbed.
  2. Remove from heat and let it sit, covered, for 5 minutes. Discard the bay leaf.
  3. Fluff with a fork, then gently fold in the lime juice, lime zest, cilantro, and salt. Serve warm.

Notes

The bay leaf is Chipotle's subtle secret. Add the lime and cilantro after cooking so they stay bright and fresh.
