- Combine the rice, water, bay leaf, and oil in a saucepan. Bring to a boil, then cover and simmer on low for 15-18 minutes until the water is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes. Discard the bay leaf.
- Fluff with a fork, then gently fold in the lime juice, lime zest, cilantro, and salt. Serve warm.
