Copycat Chipotle Guacamole

Fresh, chunky copycat Chipotle guacamole - ripe avocado, lime, cilantro, red onion, and a little jalapeno heat. Simple, authentic, and exactly like the (extra) guac you pay extra for.

Ingredients
  

  • 3 ripe avocados
  • 2 tablespoons lime juice freshly squeezed
  • 1/4 cup red onion finely diced
  • 2 tablespoons fresh cilantro chopped
  • 1/2 jalapeno seeded and minced
  • 1/2 teaspoon salt

Method
 

  1. Halve the avocados, scoop into a bowl, and mash with a fork to your preferred chunkiness.
  2. Add the lime juice first and stir - this seasons the avocado and keeps it green.
  3. Fold in the red onion, cilantro, jalapeno, and salt. Taste and adjust lime and salt, then serve right away.

Notes

Chipotle adds lime and salt before the other mix-ins so the avocado is evenly seasoned. Press plastic wrap directly onto the surface to keep leftovers from browning.
