Copycat KFC Biscuits

A copycat of KFC's biscuits - soft, fluffy, buttery biscuits with golden tops, made from scratch in 25 minutes. The ideal side for fried chicken.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 6 tablespoons cold butter cubed
  • 3/4 cup cold buttermilk
  • 2 tablespoons melted butter for brushing

Method
 

  1. Preheat the oven to 450F. Whisk the flour, baking powder, sugar, and salt.
  2. Cut in the cold butter until the mixture looks like coarse crumbs.
  3. Stir in the cold buttermilk just until a shaggy dough forms - do not overmix.
  4. Pat to 3/4 inch thick, cut biscuits, and place on a baking sheet so they touch.
  5. Bake 10-12 minutes until golden, then brush with melted butter.

Notes

Keep the butter cold and do not overwork the dough for the flakiest, softest biscuits. Brush the tops with butter right out of the oven.
