Ingredients

Fish
  • 1 pound cod or pollock cut into 4 squares
  • 1/2 cup flour
  • 1 egg beaten
  • 1 cup panko breadcrumbs
  • 1/2 teaspoon salt
Assembly
  • 4 soft buns
  • 2 slices American cheese halved
  • 1/4 cup tartar sauce

Equipment

  • Deep skillet
  • Mixing bowls

Method

  1. Pat the fish dry and season with salt. Dredge in flour, dip in egg, then coat in panko.
  2. Fry in 350F oil for 3-4 minutes until golden and crisp, then drain.
  3. Steam or microwave the buns briefly until soft and pillowy.
  4. Spread tartar sauce on the bun, add a half-slice of cheese, then the hot fish.
  5. Close and serve immediately.

Notes

Steaming the buns is the secret to that pillowy Filet-O-Fish texture. Use a mild white fish like cod or pollock.
