Copycat McDonald's French Fries

Crispy copycat McDonald's french fries - golden, salty, and shatteringly crisp with that signature flavor. The secret is a quick soak and a double fry.

Ingredients
  

  • 4 large russet potatoes cut into thin fries
  • 1 tablespoon corn syrup for the soak
  • 1 tablespoon white vinegar
  • 6 cups vegetable oil for frying, plus a little beef tallow if available
  • 1 teaspoon salt

Method
 

  1. Soak the cut fries in water with the corn syrup and vinegar for 10 minutes, then drain and dry thoroughly.
  2. Fry at 300F for 4-5 minutes until soft but not browned. Remove and let cool.
  3. Increase the oil to 400F and fry again for 3-4 minutes until golden and crisp.
  4. Drain and salt immediately while hot.

Notes

The corn syrup soak mimics the dextrose McDonald's uses for even golden color. A spoonful of beef tallow in the oil nails the classic flavor.
