Ingredients
  

  • 2 russet potatoes peeled
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • oil for frying

Equipment

  • Box grater
  • Skillet
  • Clean towel

Method
 

  1. Grate the potatoes, then squeeze out as much liquid as possible in a clean towel.
  2. Mix the dried potatoes with the cornstarch, salt, pepper, and garlic powder.
  3. Form into oval patties, pressing firmly so they hold together.
  4. Fry in 1/4 inch of oil over medium-high heat for 3-4 minutes per side until deep golden and crisp.
  5. Drain on a wire rack and serve hot.

Notes

Squeezing all the moisture from the potatoes is the key to crispiness. A little cornstarch helps the patties hold together and crisp up.
