Ingredients

  • 1/3 cup apricot preserves
  • 2 tablespoons water
  • 1 tablespoon white vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cornstarch
  • 1 tablespoon cold water for slurry

Equipment

  • Small saucepan
  • whisk

Method

  1. Combine the apricot preserves, water, vinegar, soy sauce, brown sugar, and garlic powder in a small saucepan.
  2. Bring to a gentle simmer over medium heat, whisking until smooth.
  3. Whisk the cornstarch into the cold water, then stir it into the sauce. Simmer 1-2 minutes until thickened and glossy.
  4. Cool slightly - it thickens more as it cools - then serve.

Notes

Apricot preserves give the authentic flavor and color. A cornstarch slurry thickens it to that glossy, dippable texture.
