Ingredients
  

  • 2 tablespoons olive oil
  • 1 onion diced
  • 2 carrots diced
  • 2 stalks celery diced
  • 3 cloves garlic minced
  • 1 can diced tomatoes
  • 5 cups vegetable broth
  • 1 can cannellini beans drained
  • 1 can kidney beans drained
  • 1 cup small pasta ditalini or shells
  • 2 cups spinach chopped

Method
 

  1. Saute the onion, carrots, celery, and garlic in olive oil until soft.
  2. Add the tomatoes, broth, and beans. Bring to a boil, then simmer 15 minutes.
  3. Stir in the pasta and cook until tender, about 10 minutes.
  4. Add the spinach and cook until wilted. Season with salt, pepper, and Italian herbs.

Notes

Cook the pasta separately if making ahead, so it doesn't absorb all the broth. Top with Parmesan to serve.
