Ingredients
  

  • 2 tablespoons butter
  • 1 onion diced
  • 3 cloves garlic minced
  • 28 ounces crushed tomatoes
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 1 teaspoon sugar
  • 1/4 cup fresh basil chopped
  • 1/2 teaspoon salt

Method
 

  1. Melt the butter in a pot and cook the onion until soft, 5 minutes. Add the garlic and cook 1 minute.
  2. Stir in the crushed tomatoes, broth, sugar, and salt. Simmer 15 minutes.
  3. Stir in the basil, then blend the soup smooth with an immersion or countertop blender.
  4. Return to the pot, stir in the cream, and warm through. Taste and adjust seasoning.
  5. Serve hot, garnished with basil and a swirl of cream, with grilled cheese for dipping.

Notes

A splash of cream and a pinch of sugar balance the acidity of the tomatoes for that smooth, Panera-style finish.
