Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 3/4 teaspoon salt
  • 1/2 cup cold butter cubed
  • 3/4 cup cold buttermilk
  • 3 tablespoons melted butter for brushing

Equipment

  • mixing bowl
  • Baking sheet

Method

  1. Preheat the oven to 425F. Whisk the flour, baking powder, sugar, and salt.
  2. Cut in the cold butter until crumbly with some pea-sized pieces.
  3. Stir in the cold buttermilk just until combined.
  4. Pat out, fold a few times for flaky layers, then cut biscuits and place on a baking sheet.
  5. Brush with melted butter, bake 12-14 minutes until golden, then brush with butter again.

Notes

Popeyes biscuits are extra rich - do not skimp on the butter. Handle the dough gently and brush with butter twice for that signature flavor.
