Copycat Popeyes Cajun Fries

A copycat of Popeyes Cajun Fries - thick-cut fries fried until crispy and fluffy, then tossed in a bold homemade Cajun seasoning.

Ingredients
  

Fries
  • 4 russet potatoes cut into thick fries
  • oil for frying
Cajun Seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon black pepper

Equipment

  • Deep pot or air fryer
  • mixing bowl

Method
 

  1. Soak the cut fries in cold water 30 minutes, then pat very dry.
  2. Fry at 325F for 4-5 minutes until soft but not browned, then remove.
  3. Increase the oil to 375F and fry again 2-3 minutes until golden and crisp.
  4. Mix the Cajun seasoning ingredients.
  5. Toss the hot fries with the Cajun seasoning until well coated. Serve immediately.

Notes

Double-frying (or a soak plus fry) makes the fries crispy outside and fluffy inside. Toss in the Cajun seasoning while hot so it sticks.
