A copycat of Popeyes red beans and rice - creamy, Cajun-spiced red beans partially mashed and served over rice for that classic Louisiana-style side.

Ingredients
  

  • 2 cans red kidney beans 15 oz each, with liquid
  • 2 tablespoons butter
  • 1/4 onion finely diced
  • 2 cloves garlic minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 cup water
  • 3 cups cooked white rice

Equipment

  • Potato masher

Method
 

  1. Melt the butter in a saucepan and cook the onion and garlic until soft.
  2. Add the beans with their liquid, Cajun seasoning, smoked paprika, and water.
  3. Simmer 10 minutes, then mash about half the beans for a creamy texture.
  4. Continue cooking until thick and creamy, adding water if needed.
  5. Serve the beans spooned over the cooked rice.

Notes

Popeyes' version is smooth and creamy, so mash a good portion of the beans. A little smoked sausage or Cajun seasoning brings the Louisiana flavor.
