Ingredients
  

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup Gruyere cheese shredded
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 strips bacon cooked and crumbled
  • cooking spray

Equipment

  • Muffin tin

Method
 

  1. Preheat the oven to 300F and grease 6 cups of a muffin tin well.
  2. Blend the eggs, cottage cheese, Gruyere, salt, and pepper until completely smooth.
  3. Divide the crumbled bacon among the muffin cups, then pour the egg mixture over the top.
  4. Set the muffin tin inside a larger roasting pan and pour hot water into the pan halfway up the sides.
  5. Bake 28-32 minutes until just set. Cool 5 minutes, then run a knife around each bite to release. Serve warm.

Notes

Blending the eggs with cottage cheese is the secret to the silky, custardy texture. Baking in a water bath keeps them tender instead of rubbery.
