A copycat of Starbucks' iced lemon loaf - an ultra-moist, buttery lemon pound cake finished with a bright lemon glaze. Better than the cafe version.

Ingredients
  

Cake
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 1/2 cup vegetable oil
  • 2 tablespoons butter melted
  • 2 tablespoons lemon zest
  • 3 tablespoons lemon juice fresh
  • 1 teaspoon vanilla extract
Glaze
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice fresh

Method
 

  1. Preheat the oven to 350F and grease a loaf pan. Whisk together the flour, baking powder, baking soda, and salt.
  2. In a large bowl, whisk the eggs and sugar until pale, then whisk in the sour cream, oil, melted butter, lemon zest, lemon juice, and vanilla.
  3. Fold the dry ingredients into the wet just until combined - do not overmix.
  4. Pour into the loaf pan and bake 45-50 minutes, until a toothpick comes out clean. Cool in the pan 10 minutes, then transfer to a rack.
  5. Whisk the powdered sugar and lemon juice into a smooth glaze and pour over the slightly warm loaf. Let it set before slicing.

Notes

Real lemon zest and juice are essential - bottled juice tastes flat. Sour cream keeps the crumb moist and tender. Glaze while the loaf is just warm.
