- In a measuring cup, stir together the white grape juice, water, and freeze-dried strawberries (and acai juice, if using). Let it sit 2-3 minutes so the berries soften and tint the base pink.
- Fill two tall glasses with ice and pour the strawberry base over, dividing evenly and including some of the softened berries.
- Top each glass with coconut milk and give it a gentle stir until creamy and pale pink. Garnish with a few extra freeze-dried strawberries and serve cold.
Notes
For the closest match to Starbucks, use the refrigerated coconut milk in a carton (it is thinner and creamier than canned). Want it sweeter? Add a teaspoon of simple syrup or honey to the base.
