This copycat Starbucks Pink Drink is creamy, fruity, and refreshing - the famous Strawberry Acai Refresher swirled with coconut milk and real freeze-dried strawberries, made at home for a couple of dollars a cup.

Ingredients
  

  • 1 cup white grape juice chilled
  • 1/2 cup water
  • 1/4 cup freeze-dried strawberries plus more for garnish
  • 1 teaspoon freeze-dried acai or pomegranate juice optional, for color and tang
  • 2 cups ice
  • 1/2 cup coconut milk the carton/drinking kind, not canned

Method
 

  1. In a measuring cup, stir together the white grape juice, water, and freeze-dried strawberries (and acai juice, if using). Let it sit 2-3 minutes so the berries soften and tint the base pink.
  2. Fill two tall glasses with ice and pour the strawberry base over, dividing evenly and including some of the softened berries.
  3. Top each glass with coconut milk and give it a gentle stir until creamy and pale pink. Garnish with a few extra freeze-dried strawberries and serve cold.

Notes

For the closest match to Starbucks, use the refrigerated coconut milk in a carton (it is thinner and creamier than canned). Want it sweeter? Add a teaspoon of simple syrup or honey to the base.
