Ingredients
  

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 cup pumpkin puree
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 tablespoons pepitas for topping

Method
 

  1. Preheat the oven to 350F and grease a loaf pan. Whisk the flour, baking soda, salt, and pumpkin pie spice.
  2. In another bowl, whisk the pumpkin, sugar, oil, eggs, and vanilla until smooth.
  3. Fold the dry ingredients into the wet just until combined.
  4. Pour into the loaf pan and sprinkle the top with pepitas.
  5. Bake 55-60 minutes until a toothpick comes out clean. Cool before slicing.

Notes

Use pumpkin puree, not pie filling. Oil keeps the loaf moist for days, and pepitas on top give the signature Starbucks look.
