Ingredients

Shells
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup warm water
  • oil for frying
Filling
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded lettuce
  • 1 cup shredded cheese
  • 1 tomato diced
  • 1/2 cup sour cream

Equipment

  • Skillet
  • Rolling pin

Method

  1. Mix the flour, baking powder, salt, and warm water into a soft dough. Rest 15 minutes, then divide and roll into 6 ovals.
  2. Fry each in hot oil for about 1 minute per side until puffy and golden, folding gently to form a taco shape. Drain.
  3. Brown the beef, drain, and stir in the taco seasoning with a splash of water.
  4. Fill each shell with beef, lettuce, cheese, tomato, and a dollop of sour cream.
  5. Serve immediately.

Notes

The chalupa shell is a flatbread that is fried until puffy and crisp on the outside, chewy inside. Fry briefly so it stays pliable enough to fold.
