Ingredients
  

Chicken
  • 4 chicken breasts pounded thin
  • 1 cup buttermilk
  • 2 tablespoons hot sauce
  • 1.5 cups all-purpose flour
  • 1 tablespoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • oil for frying
To Serve
  • 4 burger buns toasted
  • 4 tablespoons mayonnaise
  • 4 leaves lettuce
  • 4 slices tomato

Method
 

  1. Marinate the pounded chicken in the buttermilk and hot sauce for at least 30 minutes.
  2. Combine the flour with the cayenne, paprika, garlic powder, and salt.
  3. Dredge each fillet in the seasoned flour, pressing it on well.
  4. Fry in 350F oil for 5-6 minutes until deep golden and cooked through, then drain.
  5. Spread mayo on toasted buns and build the sandwiches with chicken, lettuce, and tomato.

Notes

The spicy kick is built into both the marinade and the breading. A buttermilk-hot sauce soak keeps the chicken juicy and adds heat.
