- Char the poblano under the broiler until blackened, then peel, seed, and roughly chop.
- Blend the poblano, chipotles, garlic, onion, tomato paste, cumin, smoked paprika, salt, and water into a smooth sauce.
- Crumble the pressed tofu and saute in oil over medium-high heat for 5-6 minutes until lightly browned.
- Pour in the sauce and simmer 10-12 minutes, stirring, until thick and the tofu has absorbed the flavor.
- Serve in bowls, tacos, or burritos.
Notes
Press the tofu well so it absorbs the sauce and crumbles like the original. Charring the poblano adds the signature smoky depth.
