- In a small saucepan over medium heat, cook the pumpkin puree, sugar, and pumpkin pie spice for 1 minute until bubbly and fragrant.
- Whisk in the milk and vanilla and heat until steaming, whisking to froth - do not boil.
- Divide the espresso between two mugs and pour in the pumpkin milk.
- Top with whipped cream and a sprinkle of pumpkin pie spice. Serve hot.
Notes
Cooking the pumpkin and spices with the sugar for a minute deepens the flavor. Whisk well or blend for a frothy, cafe-style latte.
