Ingredients
  

  • 2 tablespoons pumpkin puree
  • 2 tablespoons sugar
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla extract
  • 1.5 cups milk
  • 1/2 cup strong brewed espresso or coffee
  • whipped cream for topping

Method
 

  1. In a small saucepan over medium heat, cook the pumpkin puree, sugar, and pumpkin pie spice for 1 minute until bubbly and fragrant.
  2. Whisk in the milk and vanilla and heat until steaming, whisking to froth - do not boil.
  3. Divide the espresso between two mugs and pour in the pumpkin milk.
  4. Top with whipped cream and a sprinkle of pumpkin pie spice. Serve hot.

Notes

Cooking the pumpkin and spices with the sugar for a minute deepens the flavor. Whisk well or blend for a frothy, cafe-style latte.
